Instructions
In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Gently toss to mix and set aside for about 15 minutes.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine the milk, eggs, vegetable oil (or melted butter), and vanilla extract. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Allow the batter to rest for about 5 minutes.
