1/2 cup natural peanut butter (or almond butter for a nut-free version)
1/4 cup honey or maple syrup (for a vegan option)
1 teaspoon vanilla extract
1/4 cup unsweetened cocoa powder (optional, for chocolate flavor)
1/4 cup dark chocolate chips (optional)

In a large mixing bowl, combine the rolled oats, shredded coconut, and almond flour. Stir until evenly mixed.
In a separate microwave-safe bowl, warm the peanut butter and honey (or maple syrup) together for about 20-30 seconds or until slightly melted. Stir after heating.
Add the vanilla extract and cocoa powder (if using) to the melted mixture. Stir until fully combined and smooth.
Pour the wet mixture into the dry ingredients and mix thoroughly until all oats are well-coated.
Fold in chocolate chips, dried fruits, or nuts if desired.
Form small balls or flatten the mixture into cookie shapes on a baking sheet lined with parchment paper.
Refrigerate the cookies for at least 30 minutes to set.
