4 cups fresh peaches, peeled and sliced (about 6-8 peaches)
1/2 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1/4 teaspoon salt
1 cup all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, ground cinnamon, cornstarch, and salt. Mix well and set aside.
In another mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt. Pour in the milk, melted butter, and vanilla extract. Stir until just combined.
Grease a muffin tin and spoon the peach filling into each cup, filling them halfway. Pour the cobbler topping over the peach filling.
Bake for 25-30 minutes, or until the tops are golden brown and a toothpick comes out clean.
Allow to cool for at least 10 minutes before removing from the muffin tin. Serve warm, optionally with ice cream.
