Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a medium pot, boil the cubed sweet potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
In a large mixing bowl, mash the sweet potatoes until smooth and creamy.
