Prepare the Watermelon: Start by cutting the watermelon into slices, removing the rind and any seeds. Dice the fruit into small cubes, ensuring you have about 4 cups. Place the diced watermelon in a large bowl, allowing it to rest at room temperature to enhance its natural sweetness.
Blend the Mixture: Transfer the watermelon cubes to a blender or food processor. Add the granulated sugar, lime juice, and a pinch of salt. Blend the mixture until it becomes completely smooth, with no chunks remaining. For extra creaminess, blend for an additional 30 seconds.
Taste and Adjust: After blending, taste the mixture. If it needs more sweetness, add a little more sugar, blend again, and taste until preferred sweetness is achieved. Remember that the sweetness will dull slightly when frozen, so slightly oversweetening can be beneficial.
Chill the Mixture: Pour the blended watermelon mixture into a shallow dish or an ice cream container. Cover it tightly and place it in the freezer for about 2 hours, or until it starts to freeze around the edges.
