1 cup mayonnaise
1 tablespoon lemon juice
4 cloves garlic (minced)
1 teaspoon salt
1 tablespoon olive oil
1/2 cup tahini
2 cloves garlic (minced)
1/4 cup water
Salt to taste
1 tablespoon harissa or chili paste
1 teaspoon smoked paprika
1 cup plain yogurt
2 tablespoons cucumber (finely grated and drained)
1 tablespoon lemon juice
2 cloves garlic (minced)
Instructions
Prepare the Garlic Sauce: In a bowl, combine the mayonnaise, lemon juice, minced garlic, salt, and olive oil. Whisk until smooth and well combined.
Make the Tahini Sauce: In another bowl, mix together the tahini, lemon juice, minced garlic, and salt. Gradually add water, whisking to achieve your desired consistency.
Add Spice (if desired): For a spicy version, stir in harissa or chili paste, along with smoked paprika, into the garlic sauce or tahini sauce.
Prepare the Yogurt Sauce: In a separate bowl, combine the plain yogurt, grated cucumber, lemon juice, minced garlic, and salt. Mix well.
Store the Sauces: Transfer each sauce to separate airtight containers. Refrigerate for at least 30 minutes before serving.
Serve: Use the sauces generously with your grilled shawarma, drizzling them over the meat or offering them as a dipping sauce.
