1 cup of your favorite BBQ sauce
2 tablespoons honey
1 tablespoon apple cider vinegar

Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the diced sweet potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
Heat a large, oven-safe skillet over medium-high heat. Add the seasoned sweet potatoes and cook for about 10 minutes, stirring occasionally.
While the sweet potatoes are cooking, prepare the chicken by tossing it with a pinch of salt and pepper.
Once the sweet potatoes are partially cooked, add the chicken to the skillet. Cook for an additional 8-10 minutes, stirring occasionally.
In a small bowl, mix the BBQ sauce, honey, and apple cider vinegar. Pour this mixture over the chicken and sweet potatoes, stirring to coat everything evenly.
Reduce the heat to medium and let the mixture simmer for 5 minutes.
Sprinkle the cheddar and mozzarella cheese over the top of the skillet ingredients. Transfer the skillet to the preheated oven and bake for 10-15 minutes.
Once done, remove the skillet from the oven and let it cool slightly. Garnish with sliced green onions before serving.
