Ingredients
Scale:
1 cup (150g) all-purpose flour – ensure it is sifted to avoid lumps for a smooth batter
1 teaspoon baking powder – for a light, airy texture in the cake
1/2 teaspoon baking soda – enhances the cake's rise
1/4 teaspoon salt – balances the sweetness
1/2 cup (115g) unsalted butter, softened – use room temperature butter for easier creaming
1 cup (200g) packed brown sugar – dark brown sugar can add a deeper flavor
2 large eggs – fresh and at room temperature ensure better mixing
1 teaspoon vanilla extract – pure vanilla extract is recommended for the best flavor
1 cup (240ml) buttermilk – adds moisture and a slight tang to the cake
1 cup (150g) chopped pecans (preferably lightly toasted) – toasting enhances their flavor, making each bite more aromatic
1 cup (200g) packed brown sugar – a must for that luscious caramel flavor
1/2 cup (120ml) heavy cream – ensures a rich, creamy texture
1/4 cup (60g) unsalted butter – use fresh butter for a richer flavor
1 teaspoon vanilla extract – again, opt for pure for maximum flavor impact
Pinch of salt – highlights the sweetness and balances the flavors
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan or line it with parchment paper for easy removal.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer on medium speed until light and fluffy, about 3-5 minutes.
Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until combined.
Gradually add the buttermilk to the butter mixture, mixing until just combined.
Slowly add the dry ingredients to the wet mixture, mixing until just combined. Gently fold in the chopped pecans.
Pour the cake batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
While the cake is baking, make the toffee sauce. In a medium saucepan over medium heat, combine brown sugar, heavy cream, butter, and a pinch of salt. Stir until the mixture starts to boil, then let it simmer for 5-7 minutes, stirring occasionally until slightly thickened. Remove from heat and stir in the vanilla extract.
Once the cake is baked, allow it to cool in the pan for 10 minutes before transferring it to a wire rack. Serve warm by drenching slices with the rich toffee sauce.
