2 tablespoons olive oil, preferably extra virgin for a richer flavor
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika

1 cup quinoa, rinsed thoroughly
2 cups chicken or vegetable broth
¼ cup honey or maple syrup
¼ cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sriracha or your favorite hot sauce
1 teaspoon fresh ginger, grated
Sliced green onions, for topping

Instructions
In a medium saucepan, combine 1 cup of rinsed quinoa with 2 cups of chicken or vegetable broth. Bring to a boil over medium-high heat, then reduce to low heat, cover, and simmer for about 15 minutes until fluffy.
While the quinoa cooks, heat olive oil in a skillet over medium-high heat. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
Add the seasoned chicken to the skillet and cook for 6-8 minutes until golden brown and cooked through.
In a small bowl, whisk together honey, soy sauce, rice vinegar, sriracha, and grated ginger. Pour over the chicken and simmer for another 2-3 minutes.
