8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla extract
1/2 cup fresh strawberries, diced
1 sheet of puff pastry, thawed
1 egg, beaten (for egg wash)
Flour for dusting
Powdered sugar for dusting (optional)
Fresh strawberries for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a medium bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and creamy, then gently fold in the diced strawberries.
On a lightly floured surface, roll out the thawed puff pastry sheet to approximately 1/8 inch thick. Cut into 4x4 inch squares.
Place 1-2 tablespoons of the cream cheese filling in the center of each square. Leave a small margin around the edges.
Fold the pastry over to create a triangle shape and press the edges together to seal. Use a fork to crimp the edges.
Brush the tops of each turnover with the beaten egg.
Place turnovers on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until p■ and golden brown.
Remove from oven and let cool for a few minutes. Dust with powdered sugar and serve warm.
