1 pound ground turkey (preferably lean)
2 cups fresh green beans, trimmed and halved
1 red bell pepper, sliced
3 green onions, chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
2 tablespoons soy sauce
1 tablespoon oyster sauce
2 teaspoons chili garlic sauce
1 teaspoon sesame oil
1 tablespoon rice vinegar
Sesame seeds for garnish (optional)
Chopped fresh cilantro for garnish (optional)
Instructions
In a large skillet over medium-high heat, add the ground turkey. Cook for about 5-7 minutes, breaking it into small pieces, until browned and cooked through. Remove the turkey from the skillet and set aside.
In the same skillet, add a splash of sesame oil. Once heated, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
Add the trimmed green beans and sliced red bell pepper to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
In a small bowl, whisk together the soy sauce, oyster sauce, chili garlic sauce, and rice vinegar.
Return the cooked turkey to the skillet. Pour the sauce over the turkey and vegetables. Stir well to ensure everything is coated evenly. Cook for an additional 2-3 minutes.
Add the chopped green onions and stir one more time. Serve hot, garnished with sesame seeds and fresh cilantro if desired.
