1 lb ground beef (preferably 80/20 for flavor)
1 small onion, finely grated
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon smoked paprika
1 teaspoon cayenne pepper
Salt and pepper to taste
1 tablespoon olive oil
1 cup plain Greek yogurt
2 tablespoons harissa paste
1 tablespoon lemon juice
Salt to taste
Fresh parsley, chopped (for garnish)
Thinly sliced cucumbers
Chopped tomatoes
Instructions
In a large mixing bowl, combine ground beef, grated onion, minced garlic, parsley, mint, cumin, coriander, smoked paprika, cayenne pepper, salt, pepper, and olive oil. Use your hands to mix the ingredients until well combined.
Wet your hands with a bit of water and shape about 2 tablespoons of the meat mixture into an elongated meatball. Press the meat onto skewers.
Preheat your grill to medium-high heat (about 400°F/200°C). Soak wooden skewers in water for 30 minutes if using.
Place the kofta skewers on the grill and cook for 4-5 minutes on each side, until golden brown and cooked through.
While the kofta is grilling, whisk together the Greek yogurt, harissa paste, lemon juice, and a pinch of salt until smooth.
Remove the kofta from the grill and let them rest for a couple of minutes. Serve with harissa yogurt on the side and garnish with fresh parsley, cucumbers, and tomatoes.
