Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
In a separate bowl, mix the melted butter, egg, vanilla extract, and buttermilk until well blended.
Pour the wet ingredients into the dry ingredients and stir gently until just combined.
Gently fold in the diced strawberries.
In another small bowl, beat together the softened cream cheese, powdered sugar, and additional vanilla extract until smooth.
