Ingredients
Scale:
2 large chicken breasts (about 1 pound)
2 tablespoons olive oil
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1-2 tablespoons chipotle sauce (adjust based on heat preference)
4 large flour tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup shredded cheese (cheddar or Monterrey Jack)
1/4 cup diced red onion
1/4 cup fresh cilantro, chopped
1/4 cup smoky chipotle dressing (store-bought or homemade)
Instructions
Prepare the Smoked Chicken: In a bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and chipotle sauce until well combined. Rub this mixture over the chicken breasts, ensuring they are evenly coated.
Smoke the Chicken: Preheat your smoker to 225°F (107°C). Place the seasoned chicken breasts in the smoker and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).
Let It Rest: Once smoked, remove the chicken from the smoker and allow it to rest for 10 minutes.
Shred the Chicken: Once cooled slightly, shred the chicken using two forks or your hands. Set aside.
Assemble the Wraps: Lay out the flour tortillas on a clean surface. Spread a layer of smoky chipotle dressing on each tortilla. Layer with shredded lettuce, diced tomatoes, shredded cheese, red onion, and a generous portion of the smoked chicken.
Wrap It Up: Fold in the sides of the tortilla and then roll up from the bottom to the top, creating a tight wrap.
Serve: Cut the wraps in half diagonally and serve immediately with extra chipotle sauce or dressing on the side.
