2 pounds of baby Yukon Gold potatoes, halved (or quartered if large)
2 medium onions, thinly sliced
4 cloves of garlic, minced
1/2 cup (1 stick) of unsalted butter, melted
1 cup of low-sodium chicken or vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme (or fresh, if available)
1 teaspoon garlic powder
Chopped fresh parsley for garnishing (optional)
Instructions
Prepare the Slow Cooker: Spray the inside of your slow cooker with cooking spray or lightly grease it with olive oil to prevent sticking.
Layer the Ingredients: Place the halved potatoes in the bottom of the slow cooker, followed by the sliced onions and minced garlic.
Mix the Sauce: In a separate bowl, combine the melted butter, chicken or vegetable broth, salt, pepper, thyme, and garlic powder. Stir well.
Pour the Sauce: Pour the butter mixture evenly over the potatoes and onions. Gently stir to coat.
Cook: Cover the slow cooker and set it on low heat. Cook for 6 to 8 hours or on high for 3 to 4 hours.
Check for Doneness: About 30 minutes before serving, check the potatoes for tenderness.
Serve: Once cooked, serve the potatoes warm, garnished with fresh parsley if desired.
