1 cup chicken broth (low sodium preferred)
1 cup heavy cream (or coconut cream for a dairy-free option)
6 cloves garlic, minced
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
2 cups carrots, sliced
1 cup bell peppers, chopped (any color)
2 cups zucchini, sliced
1 cup broccoli florets
Fresh parsley, chopped (for serving)
Grated Parmesan cheese (optional)
Instructions
Season the chicken thighs with salt, pepper, and garlic herb seasoning. Make sure the chicken is evenly coated.
Place the sliced carrots, bell peppers, zucchini, and broccoli in the bottom of the slow cooker.
Arrange the seasoned chicken thighs over the vegetables in the slow cooker.
In a bowl, whisk together the chicken broth, heavy cream, minced garlic, Dijon mustard, and Worcestershire sauce until smooth.
Pour the creamy garlic sauce over the chicken and vegetables in the slow cooker.
Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.
Once cooked, shred the chicken using two forks or serve the thighs whole.
Serve hot, garnished with freshly chopped parsley and a sprinkle of grated Parmesan cheese if desired.
