4 slices of thick-cut bread (preferably sourdough or ciabatta)
3 large eggs
1 cup whole milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1 tablespoon olive oil (or melted butter) for cooking
1 tablespoon olive oil
2 cups fresh spinach leaves, washed and dried
1 cup mushrooms, sliced (button or cremini work well)
1 clove garlic, minced
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh herbs like parsley or chives, chopped
Additional grated Parmesan cheese
Instructions
In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg until well combined.
Heat a non-stick skillet over medium heat and add a tablespoon of olive oil. Once hot, add the mushrooms and cook for about 5 minutes, stirring occasionally, until they are softened and golden brown.
Add the minced garlic to the mushrooms and cook until fragrant, about 1 minute. Then, add the spinach and sauté for another 2-3 minutes until wilted. Season with salt and pepper to taste, and set aside.
Dip each slice of bread into the egg mixture, ensuring both sides are thoroughly soaked. Let any excess mixture drip off before placing the bread in the skillet.
In the same skillet, used earlier, add a touch more olive oil if needed. Place the soaked bread slices in the skillet and cook for 3-4 minutes on each side over medium heat, until golden brown and crispy on the outside.
Transfer the cooked slices to a plate. Spoon the spinach and mushroom filling over each slice, sprinkle with grated Parmesan cheese, and serve immediately.
