A delicious twist on a classic breakfast dish that combines the comforting flavors of French toast with nutritious vegetables.

4 slices of thick-cut bread (sourdough or whole grain recommended)
3 large eggs
1/2 cup milk (or a plant-based alternative)
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 cup fresh spinach, chopped finely
1 cup mushrooms, sliced
1 tablespoon olive oil
1/4 cup onion, finely diced
1/2 teaspoon fresh thyme
2 tablespoons cream cheese (softened)
Fresh herbs (like parsley or chives) for garnish
Salt and pepper to taste
Instructions
In a medium bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until smooth and well combined.
In a skillet, heat olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Then, add the sliced mushrooms and thyme, cooking for an additional 4-5 minutes until softened. Stir in the chopped spinach and cook just until wilted, about 1-2 minutes. Remove from heat.
Dip each slice of bread into the egg mixture, ensuring both sides are well-coated. Allow excess egg to drip off.
In the same skillet over medium heat, add more olive oil if necessary. Place the soaked bread slices in the skillet and cook for 3-4 minutes on each side until golden brown.
Once cooked, spread a layer of softened cream cheese on top of each slice. Spoon the sautéed spinach and mushroom mixture over the cream cheese.
Sprinkle fresh herbs on top, and season with salt and pepper. Serve immediately while warm.
