Ingredients
Scale:
4 boneless, skinless chicken breasts (about 1.5 to 2 pounds)
1 cup salsa verde (store-bought or homemade)
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon garlic powder
Salt and pepper to taste
2 cups long-grain white rice
4 cups chicken broth (or vegetable broth for a vegetarian option)
1 tablespoon lime juice
1/4 cup fresh cilantro, chopped
1 teaspoon salt
Avocado slices (optional)
Chopped fresh cilantro (optional)
Lime wedges (optional)
Shredded cheese (e.g., Monterey Jack or Cotija) (optional)
Instructions
In a large mixing bowl, combine the chicken breasts with olive oil, ground cumin, garlic powder, salt, and pepper. Mix well until the chicken is evenly coated.
Heat a large skillet or pot over medium-high heat. Add the chicken and sear each side for about 3-4 minutes until golden brown.
Once browned, pour in the salsa verde over the chicken and bring the mixture to a simmer for about 2-3 minutes.
In a separate pot, combine the rice, chicken broth, lime juice, and salt. Bring to a boil, then reduce to low, cover, and cook for about 15-20 minutes.
Once the chicken is cooked through (about 10-15 minutes), check that the internal temperature reaches 165°F (75°C). Add the cooked rice into the skillet with the chicken and salsa verde, mixing thoroughly.
Remove from heat and sprinkle with fresh cilantro. Serve hot, garnished with avocado slices, additional cilantro, cheese, and lime wedges if desired.
