4 salmon fillets (6 ounces each)
2 tablespoons olive oil
3 cloves garlic, minced
1 lemon (juice and zest)
1 teaspoon dried oregano
Salt and pepper, to taste
1 cup jasmine rice or brown rice
2 cups vegetable broth or water
1 tablespoon butter or olive oil

2 cups fresh broccoli florets
1 tablespoon olive oil

Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, combine olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper. Stir well. Place the salmon fillets in a baking dish and brush the mixture generously over each piece.
Transfer the baking dish to the preheated oven. Bake for 12-15 minutes or until the salmon flakes easily with a fork and is opaque in the center.
While the salmon is baking, rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, vegetable broth (or water), butter, and salt. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes (jasmine rice) or 40-45 minutes (brown rice). Remove from heat and let it sit covered for 5 minutes, then fluff gently with a fork.
While the rice cooks, steam the broccoli florets for about 5-7 minutes until they are bright green and tender-crisp. Drizzle with olive oil and season with salt and pepper.
Once everything is cooked, serve the salmon on a bed of rice with steamed broccoli on the side. Squeeze additional lemon juice over the top.
