Ingredients
Scale:
1/2 cup (115g) unsalted butter, plus extra for greasing
1 cup (170g) high-quality semi-sweet chocolate chips or chopped chocolate, preferably with a cocoa content of at least 60%
2 large eggs, at room temperature
2 large egg yolks, also at room temperature
1/4 cup (50g) granulated sugar
2 tablespoons (15g) all-purpose flour, sifted
1/4 teaspoon salt
Powdered sugar, for dusting (optional)
Vanilla ice cream or whipped cream, for serving (optional)
Fresh berries (raspberries or strawberries), for garnish (optional)
Instructions
Preheat the oven to 425°F (220°C).
Grease four ramekins (6-ounce size) generously with butter.
In a medium microwave-safe bowl, combine the unsalted butter and chocolate. Microwave in 30-second intervals, stirring after each, until melted and smooth.
In a large mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and slightly thickened, about 2-3 minutes.
Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously.
Sift in the flour and salt, folding gently until just combined.
Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes.
Remove from the oven and let cool for 1 minute.
Carefully run a knife around the edges of each ramekin, then invert them onto individual serving plates.
