This papaya cucumber salad is a delightful blend of tropical flavors, making it the perfect dish for hot days. Packed with crunchy textures and a zesty lime dressing, this salad is not only quick to prepare but also loaded with nutritional benefits.
Ingredients
Scale:
1 ripe papaya, peeled, seeded, and diced
1 large cucumber, peeled and diced
½ red bell pepper, diced
¼ red onion, finely chopped
1 cup cherry tomatoes, halved
¼ cup fresh cilantro, chopped
3 tablespoons fresh lime juice
2 tablespoons olive oil
1 teaspoon honey (or agave nectar for a vegan option)
Salt and pepper to taste
Instructions
Start by peeling the papaya with a sharp vegetable peeler. Cut it in half lengthwise, scoop out the seeds with a spoon, and dice the flesh into bite-sized pieces. Set aside in a large mixing bowl.
Peel the cucumber using a peeler, then slice it in half lengthwise. Use a spoon to carefully remove the seeds. Dice the cucumber into small, uniform pieces.
In the same large mixing bowl, combine the diced papaya, cucumber, red bell pepper, red onion, cherry tomatoes, and chopped cilantro. Toss gently to incorporate all the ingredients.
In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper. Whisk vigorously until the dressing is emulsified and smooth.
Pour the lime dressing over the salad mixture. Gently toss the salad again to ensure each piece of fruit and vegetable is evenly coated.
Let the salad sit for about 5 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
