Ingredients
Scale:
1 cup all-purpose flour, sifted
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 teaspoon red food coloring
1/2 cup buttermilk
1/2 cup semi-sweet chocolate, chopped
1/4 cup heavy cream
Powdered sugar, for dusting
Cream cheese frosting (optional)
Fresh berries, for garnish (optional)
Instructions
Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder.
In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
In another bowl, combine the melted butter, eggs, vanilla extract, red food coloring, and buttermilk. Whisk until smooth.
Pour the wet ingredients into the dry ingredients and mix until just combined.
For the molten center, heat the chopped chocolate and heavy cream in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
Divide half of the cake batter among the prepared ramekins. Add a spoonful of the melted chocolate mixture in the center of each ramekin, then top with the remaining batter.
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
Remove from the oven and allow to cool for 1 minute. Carefully invert each ramekin onto a serving plate.
Dust with powdered sugar and top with cream cheese frosting and fresh berries, if desired. Serve immediately.
