4 (6-ounce) white fish fillets (such as cod, tilapia, or haddock)
2 tablespoons olive oil
2 tablespoons lemon juice (freshly squeezed)
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
1 cup cherry tomatoes, halved
1 zucchini, sliced
1 bell pepper, sliced
1 cup spinach or kale (optional)
1 tablespoon olive oil (for drizzling)

Instructions
Preheat your oven to 400°F (200°C).
Lightly grease a baking dish with cooking spray or a little olive oil.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Brush this mixture onto the fish fillets.
Toss the cherry tomatoes, zucchini, bell pepper, and spinach (if using) with olive oil, salt, and pepper. Spread around the fish fillets in the baking dish.
Bake for 15-20 minutes, or until the fish flakes easily with a fork and the vegetables are tender.
Remove from the oven and serve warm, drizzling any remaining pan juices over the top.
