  1. Peel the carrots and slice them into sticks or rounds.
  2. In a medium saucepan, combine the vinegar, water, sugar, salt, mustard seeds, coriander seeds, garlic, and red pepper flakes. Place over medium heat and stir until the sugar and salt are dissolved. Bring the mixture to a gentle boil, then remove from heat.
  3. In a clean glass jar, layer the carrot pieces and sliced onion (if using).
  4. Carefully pour the hot pickling brine over the carrots, ensuring they are fully submerged.
  5. Seal the jar with a lid and let it cool at room temperature for about an hour.
  6. Once cooled, place the jar in the refrigerator. Allow the carrots to pickle for at least 24 hours before enjoying.
