2 cups all-purpose flour, sifted
1 teaspoon salt
1 teaspoon baking powder
¾ cup warm water (around 110°F or 43°C)
2 tablespoons olive oil
2 medium ripe pears, thinly sliced
4 ounces Gorgonzola cheese, crumbled
½ cup walnuts, roughly chopped
2 tablespoons honey (optional)
Fresh arugula (optional, for garnish)
Freshly cracked black pepper (to taste)
Instructions
In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Mix well until fully incorporated.
Gradually add warm water and olive oil to the dry ingredients. Stir until a dough forms.
Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth and elastic.
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
After resting, divide the dough into two equal pieces. Roll each piece into a thin oval or rectangle, about ¼ inch thick.
Place the rolled dough onto a baking sheet lined with parchment paper, or onto a preheated pizza stone.
Evenly distribute the sliced pears over the flatbread. Sprinkle the crumbled Gorgonzola cheese and chopped walnuts on top.
Bake in the preheated oven for 12 to 15 minutes, or until the edges are golden brown and the cheese is bubbly.
Remove from the oven and drizzle with honey if desired. Garnish with fresh arugula and cracked black pepper before serving.
