Ingredients
Scale:
2 cups heavy cream
1 cup sweetened condensed milk
1 cup creamy peanut butter
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1/4 cup brown sugar, packed
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup mini chocolate chips
Crushed peanuts (optional)
Chocolate syrup (optional)
Whipped cream (optional)
Instructions
In a medium bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Add in the vanilla extract and mix well until fully combined.
Gradually add the all-purpose flour and salt to the butter mixture. Stir until it forms a dough, about 1-2 minutes of mixing. If using raw flour, heat it in the microwave for 1 minute to kill any bacteria.
Fold in the mini chocolate chips until evenly distributed throughout the dough. Set the dough aside and refrigerate for at least 30 minutes.
In a large mixing bowl, combine the heavy cream, sweetened condensed milk, creamy peanut butter, vanilla extract, and salt. Using a hand mixer, whip the mixture until soft peaks form, about 3-5 minutes.
Gently fold in the chilled cookie dough pieces into the ice cream base until distributed evenly.
Transfer the ice cream mixture into an airtight container, smooth the top and seal tightly. Freeze for at least 4-6 hours, preferably overnight.
Once frozen, scoop out servings and top with crushed peanuts, chocolate syrup, or whipped cream as desired.
