A delightful combination of sweet, juicy peaches and creamy ricotta, perfect for a summer brunch or an elegant snack.
Ingredients

4 slices of artisanal bread (such as sourdough or whole grain), thickly sliced for a hearty base
2 ripe peaches, sliced into wedges
1 cup ricotta cheese, preferably whole milk for creaminess
2 tablespoons honey (adjust sweetness to taste)
1 teaspoon vanilla extract (pure vanilla extract is recommended)
Pinch of salt
Fresh mint leaves for garnish
Optional: Balsamic glaze for drizzling
Instructions
In a medium mixing bowl, combine 1 cup of ricotta cheese, 2 tablespoons of honey, 1 teaspoon of vanilla extract, and a pinch of salt. Whip the mixture until smooth and creamy.
Preheat your oven to 400°F (200°C) or use a toaster. Arrange 4 slices of artisanal bread on a baking sheet and toast them for about 8-10 minutes, or until golden brown and crisp.
While the bread is toasting, wash and slice the 2 ripe peaches into thin wedges.
Once the bread is ready, spread a generous layer of the whipped ricotta mixture onto each slice of toasted bread.
Top each toast with the sliced peaches, arranging them artfully.
Sprinkle a few mint leaves over the top of each toast. Drizzle with balsamic glaze if desired.
