Ingredients

- 8 oz crispy nacho chips
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 1½ cups shredded cheese (preferably a meltable variety)
- 1 tsp paprika
- ½ tsp garlic powder
- Salt and pepper to taste
- 1 cup diced tomatoes
- ½ cup sliced jalapeños (fresh or pickled)
- 1 cup black beans, rinsed and drained
- ½ cup sliced green onions
- 1 cup guacamole (optional)
- 1 cup sour cream (optional)
- 1 cup salsa (for serving)
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a small saucepan, melt the butter over medium heat.
- Add the flour and whisk continuously for about 1 minute until bubbly and lightly golden.
- Gradually pour in the milk, whisking constantly to prevent lumps. Cook for about 3-4 minutes until thickened.
- Reduce heat to low, then add the shredded cheese, paprika, garlic powder, salt, and pepper. Stir until melted and smooth.
- On a large baking sheet, spread out the crispy nacho chips in a single layer.
- Sprinkle shredded cheese over the chips.
- Pour the nacho cheese sauce over the chips.
- Scatter the diced tomatoes, black beans, and jalapeños over the cheese-covered chips.
- Sprinkle green onions and cilantro on top.
- Place the baking sheet in the preheated oven and bake for 10-15 minutes until cheese is bubbly and golden.
- Remove from the oven and let cool slightly.
- Serve with guacamole, sour cream, and salsa on the side.
