Description
A delightful twist on a classic recipe combining moist banana bread with rich coffee flavors.
Ingredients
Scale:
3 ripe bananas, mashed
1/3 cup unsalted butter, melted
1 teaspoon baking soda
Pinch of salt
3/4 cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsalted butter, softened (for frosting)
2 cups powdered sugar
2 tablespoons brewed espresso or strong coffee, cooled
1 teaspoon vanilla extract (for frosting)
Pinch of salt (for frosting)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
In a mixing bowl, combine the melted butter and mashed ripe bananas. Stir until well blended.
Mix in the granulated sugar, beaten egg, and vanilla extract until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the banana mixture, stirring gently until just combined.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well after each addition.
Add the cooled espresso, vanilla extract, and a pinch of salt. Beat until smooth and creamy.
Once the banana bread has cooled completely, spread the creamy espresso frosting evenly over the top.
