1 pound ground lamb (or ground beef for a milder flavor)
1/2 cup breadcrumbs (preferably whole wheat)
1/4 cup grated Parmesan cheese
1/4 cup crumbled feta cheese
2 cloves garlic, minced
1 large egg
2 tablespoons fresh parsley, chopped
1 tablespoon fresh mint, chopped
1 teaspoon dried oregano
1 teaspoon ground cumin
Salt and pepper, to taste
1 cup Greek yogurt
1/2 cucumber, finely grated and drained
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon fresh dill or mint, chopped
Juice of 1/2 lemon
Salt, to taste
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the ground lamb, breadcrumbs, Parmesan cheese, feta cheese, minced garlic, egg, parsley, mint, oregano, cumin, salt, and pepper. Mix until just combined.
Using your hands, form the mixture into small, bite-sized meatballs, about 1 inch in diameter. Place them on the prepared baking sheet, spacing them at least 1 inch apart.
Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside.
While the meatballs are baking, prepare the tzatziki sauce. In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and salt. Mix well and refrigerate until ready to serve.
Once the meatballs are done, remove them from the oven and let them cool slightly. Serve warm with the tzatziki sauce for dipping.
