3 ripe avocados, diced

1 cup corn, fresh or canned, drained
1 cup black beans, rinsed and drained
1/2 cup fresh cilantro, chopped
1 jalapeño pepper, seeds removed and finely diced (optional)
1/4 cup fresh lime juice (about 2-3 limes)
2 tablespoons olive oil
1 clove garlic, minced
1/2 teaspoon ground cumin

Instructions
Prepare the lime dressing by whisking together the lime juice, olive oil, minced garlic, ground cumin, salt, and pepper in a small bowl. Set aside to allow the flavors to meld for at least 5 minutes.
