This delightful recipe beautifully melds the sweet, rich flavors of maple syrup and bourbon with the crunch of roasted pecans. Perfect for special occasions or a warm family dinner.
In a medium bowl, whisk together the maple syrup, bourbon, soy sauce, Dijon mustard, olive oil, and apple cider vinegar until well combined.
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight.
Preheat your oven to 375°F (190°C).
In a shallow bowl, combine the chopped pecans, salt, pepper, garlic powder, and onion powder.
Remove the chicken from the marinade and dip each breast into the pecan mixture, pressing gently to adhere the nuts to the chicken.
Place the coated chicken breasts onto a lightly greased baking sheet. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Once cooked, remove the chicken from the oven and let it rest for 5 minutes before slicing.
