A refreshing salad that combines the sweetness of ripe mangoes with the cool crunch of cucumbers, enhanced by creamy avocado and fresh blueberries.
Ingredients
Scale:
2 ripe mangoes, peeled, pitted, and diced
1 large cucumber, peeled and diced
1 cup blueberries, fresh or frozen, thawed if using frozen
1 ripe avocado, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped (optional)
3 tablespoons olive oil
2 tablespoons lime juice, freshly squeezed
1 tablespoon honey or agave syrup
Salt and pepper, to taste
Pinch of cayenne pepper (optional)
Instructions
Prepare the ingredients: Start by peeling and dicing the mangoes. Ensure they are ripe for maximum sweetness. Peel and dice the cucumber, avocado, and finely chop the red onion. Rinse the blueberries and set aside.
Make the dressing: In a small bowl, whisk together the olive oil, lime juice, honey, salt, pepper, and cayenne pepper if desired. Adjust seasoning according to your taste.
Combine the salad: In a large mixing bowl, gently toss together the diced mango, cucumber, blueberries, avocado, and red onion. Pour the dressing over the salad and mix lightly to coat.
Garnish: If using, sprinkle the chopped cilantro over the salad.
Chill and serve: Allow the salad to sit for about 10-15 minutes before serving. Serve chilled or at room temperature.
