6 ripe bananas, sliced
1/2 cup granulated sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 tablespoon lemon juice
1 tablespoon all-purpose flour
1 cup all-purpose flour
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons unsalted butter, chilled and cubed
1/2 cup buttermilk
2 tablespoons melted butter
2 tablespoons granulated sugar (for sprinkling)
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine sliced bananas with granulated sugar, brown sugar, vanilla extract, cinnamon, lemon juice, and flour. Stir gently.
Pour the banana mixture into a greased 9x13-inch baking dish, spreading it evenly.
In another bowl, whisk together flour, sugar, baking powder, and salt. Cut in the chilled cubed butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.
Drop spoonfuls of the biscuit mixture over the banana filling, covering most of the surface.
Brush the top of the biscuits with melted butter and sprinkle with granulated sugar. Bake for 30-35 minutes or until the topping is golden brown and cooked through.
Allow the cobbler to cool slightly before serving.
