1 cup corn (fresh, frozen, or canned)
1 cup cherry tomatoes, halved
1 avocado, diced
1/2 cup shredded cheese (cheddar or a Mexican blend)
1/4 cup chopped fresh cilantro
1/2 cup sour cream or Greek yogurt
1/2 cup spicy salsa (adjust to taste)
1/4 cup sliced jalapeños (optional)
1 ripe avocado (for dressing)
1/2 cup Greek yogurt (for dressing)
1 tablespoon lime juice (for dressing)

Instructions
Preheat your oven to 425°F (220°C).
Cut the russet potatoes into cubes, roughly 1-inch in size.
In a large bowl, toss the potato cubes with olive oil, garlic powder, chili powder, smoked paprika, salt, and pepper until well-coated.
Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the oven for 25-30 minutes, flipping halfway through, until they are golden brown and tender.
