A creamy, flavorful, and versatile cheese alternative perfect for nachos, tacos, or as a dip. This dairy-free cheese sauce combines the richness of cashews with savory spices for an irresistible flavor.
Ingredients
Scale:
1 cup raw cashews (soaked in water for at least 4 hours or overnight)
1/2 cup water (adjust for desired consistency)
1/4 cup nutritional yeast
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
2 tablespoons lemon juice
1 teaspoon salt (to taste)
1/4 teaspoon red pepper flakes (optional)
Instructions
Drain and rinse the soaked cashews under cold water.
In a high-speed blender, combine the soaked cashews, water, nutritional yeast, garlic powder, onion powder, cumin, smoked paprika, lemon juice, salt, and red pepper flakes (if using).
Blend on high until the mixture is completely smooth and creamy, scraping down the sides as necessary.
If the sauce is too thick, gradually add more water, a tablespoon at a time, blending until you achieve your desired consistency.
Taste the sauce and adjust seasoning as needed.
Transfer the cheese sauce to a saucepan and heat over medium-low heat, stirring frequently until warmed through, about 5 minutes.
