2 large onions, finely chopped
1 cup all-purpose flour
1/2 cup cornmeal
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1 cup water
Vegetable oil, for frying
1 cup sour cream or vegan yogurt
1 tablespoon fresh dill, chopped
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the finely chopped onions with a pinch of salt. Let them sit for about 10 minutes.
In a separate bowl, whisk together the flour, cornmeal, baking powder, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Gradually add water, stirring until you achieve a smooth, thick batter.
Add the onions to the batter and stir well to ensure all onion pieces are coated evenly.
In a deep pot or large frying pan, heat vegetable oil to a depth of about 2 inches until it reaches 350°F (175°C).
Drop heaping tablespoons of the onion mixture into the hot oil. Fry them in batches for about 3-4 minutes on each side, or until golden brown and crispy.
Once cooked, remove the onion balls from the oil using a slotted spoon and transfer them to a plate lined with paper towels.
In a small bowl, mix together the sour cream or vegan yogurt, fresh dill, lemon juice, salt, and pepper to prepare the dipping sauce.
