A delicious and satisfying meal made with homemade focaccia bread and various fillings.
Ingredients

4 cups all-purpose flour, preferably unbleached
1 packet (2 ¼ teaspoons) active dry yeast
2 teaspoons kosher salt
1 tablespoon sugar
1 ½ cups warm water (about 110°F)
¼ cup extra virgin olive oil (plus more for drizzling)
1 tablespoon fresh rosemary (or a mix of fresh herbs like thyme and oregano)
8 ounces sliced deli meats (such as turkey, ham, or salami) or grilled vegetables
4 ounces cheese (mozzarella, provolone, or your favorite)
Fresh arugula or spinach
Tomato slices
Olive oil and balsamic vinegar for drizzling
Instructions
Activate the Yeast: In a bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
Mix the Dough: In a large mixing bowl, combine the flour and salt. Create a well in the center, then add the activated yeast mixture and olive oil. Mix until a sticky dough forms.
Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Prepare for Baking: Preheat your oven to 400°F (200°C). Grease a baking sheet or a large cast-iron skillet with olive oil.
Shape the Focaccia: Once the dough has risen, punch it down and transfer it to the prepared baking sheet. Spread it out with your fingers and dimple the surface.
Add Toppings: Drizzle the top with olive oil, sprinkle with fresh rosemary and sea salt. Let it rise again for about 20-30 minutes.
Bake the Focaccia: Bake in the preheated oven for 20-25 minutes until golden brown.
Assemble the Sandwich: Slice the focaccia horizontally. Drizzle the inside with olive oil and balsamic vinegar. Layer the fillings.
Serve: Close the sandwich and cut it into portions. Serve immediately.
