Instructions

  1. In a large mixing bowl, combine 1 ½ cups warm water with the active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy, indicating the yeast is activated and ready to go.
  2. In a separate bowl, whisk together the all-purpose flour and sea salt. Gradually add the flour mixture to the yeast mixture, stirring until a sticky dough forms that is slightly elastic but manageable.
  3. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. If the dough is too sticky, sprinkle a bit more flour as needed, but be careful not to over-flour, as it may yield a dense focaccia.
  4. Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it doubles in size. This is crucial for achieving that delightful, airy texture.
  5. Once risen, punch down the dough gently to release air. Transfer it to a greased baking sheet, stretching it gently to fill the pan. Use your fingers to dimple the surface, creating those signature indentations which help hold toppings and oil.
  6. Cover the dough again and let it rise for another 30 minutes. Preheat your oven to 425°F (220°C) during this time to ensure it's hot and ready for baking.
  7. Drizzle olive oil over the dough, sprinkle with coarse sea salt, and add fresh herbs if desired for an aromatic finish. Bake for 20-25 minutes or until golden brown. The focaccia should be soft inside and crispy on the outside, a perfect contrast of textures.
  8. Allow the focaccia to cool in the pan for a few minutes, then transfer to a wire rack. Once cooled, slice the focaccia horizontally to create sandwich halves, ensuring even portions for each serving.
