Ingredients
Scale:
4 salmon fillets (about 6 ounces each)
1/4 cup honey
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice vinegar
1 tablespoon sriracha sauce (adjust for spiciness)
2 cloves garlic, minced
Salt and pepper to taste
1 cup cooked quinoa or brown rice
2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
1 tablespoon olive oil
Salt and pepper to taste
Chopped green onions
Sesame seeds
Fresh cilantro or parsley
Sliced avocado (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together honey, soy sauce, rice vinegar, sriracha, and minced garlic.
Place the salmon fillets on a lined baking sheet, skin-side down. Season with salt and pepper, then brush each fillet generously with the spicy honey glaze. Reserve some glaze for later to drizzle on top after baking.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is golden brown on top.
While the salmon bakes, heat olive oil in a pan over medium heat. Add mixed vegetables, season with salt and pepper, and sauté for about 5-7 minutes until they are tender yet still vibrant in color.
In a bowl, add a generous scoop of cooked quinoa or brown rice. Top with the sautéed vegetables and place the baked salmon on top. Drizzle the reserved spicy honey glaze over the salmon.
Garnish your Hot Honey Salmon Bowl with chopped green onions, sesame seeds, and fresh herbs. If desired, add sliced avocado.
