1 lb boneless, skinless chicken thighs or breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup hot honey
1 cup jasmine rice
2 cups water or chicken broth
1 tablespoon sesame oil
1 tablespoon soy sauce
1 ripe avocado, sliced
1/4 cup green onions, chopped
1 tablespoon sesame seeds (optional)
Fresh cilantro for garnish (optional)
Instructions
In a medium saucepan, combine the jasmine rice and water (or chicken broth). Bring to a boil over medium-high heat, then reduce heat to low and cover. Simmer for about 15 minutes, or until the rice is tender and the water is fully absorbed.
Once cooked, remove the rice from heat and let it sit covered for an additional 5 minutes. Fluff the rice gently with a fork to separate the grains, then mix in sesame oil and soy sauce thoroughly. Set aside.
While the rice cooks, heat olive oil in a large skillet over medium-high heat. Season the chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
Add the seasoned chicken to the skillet and cook for 5-7 minutes per side, or until cooked through and golden brown. The internal temperature should reach 165°F (75°C).
Reduce the heat to medium and pour the hot honey over the chicken. Allow it to simmer for an additional 2-3 minutes, turning the chicken to coat it evenly in the glaze.
To serve, place a scoop of rice in each bowl. Top with sliced chicken, avocado slices, and green onions. Sprinkle sesame seeds if desired.
