4 salmon fillets (about 6 ounces each)
2 tablespoons unsalted butter, melted
3 tablespoons hot honey
Salt and black pepper, to taste
2 ripe peaches, pitted and sliced
1 large avocado, diced
2 cups mixed greens (such as arugula and spinach)
1/4 red onion, thinly sliced
Juice of 1 lime
1 tablespoon olive oil
Fresh cilantro, chopped (optional)
Crushed red pepper flakes (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix the melted butter and hot honey together until well combined.
Place the salmon fillets on a parchment-lined baking sheet. Brush the tops generously with the hot honey butter mixture. Season with salt and black pepper to taste.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon is roasting, combine the sliced peaches, diced avocado, mixed greens, and red onion in a large bowl. Drizzle with lime juice and olive oil, then toss gently to combine.
Once the salmon is done, remove it from the oven and let it rest for a minute. In serving bowls, layer the salad as a base and top with a roasted salmon fillet, drizzling additional hot honey over the salmon.
