Ingredients
Scale:
1.5 lbs boneless, skinless chicken thighs or breasts
1/4 cup honey
1/4 cup soy sauce (use tamari for gluten-free)
3 cloves garlic, minced
1 tablespoon fresh ginger, grated (optional)
1 tablespoon sesame oil
4 cups broccoli florets, preferably fresh
2 tablespoons olive oil, extra virgin recommended
Salt and pepper to taste
Sesame seeds for garnish (optional)
Chopped green onions for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a medium bowl, whisk together honey, soy sauce, minced garlic, ginger, and sesame oil until well combined.
Place the chicken in a large ziplock bag or bowl and pour half of the honey garlic marinade over it. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
While the chicken marinates, toss the broccoli florets in olive oil and season with salt and pepper.
Line a baking sheet with parchment paper. Arrange the marinated chicken on one side and the seasoned broccoli on the other side.
Place the sheet pan in the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown, while the broccoli is tender.
In the last 5 minutes of baking, brush the remaining honey garlic marinade over the chicken.
Once cooked, remove the sheet pan from the oven. Let it rest for a few minutes before slicing the chicken. Garnish with sesame seeds and chopped green onions if desired.
