Homemade Spicy Mayonnaise is a zesty condiment that adds a delightful kick to sandwiches, wraps, and even sushi. This creamy sauce is not only simple to make but also versatile enough to elevate your meals and snacks.

1 large egg (room temperature)
1 tablespoon Dijon mustard
1 tablespoon white wine vinegar or lemon juice
1 cup neutral oil (like canola or sunflower oil)
Salt to taste
2-3 tablespoons sriracha (adjust for desired heat)
1 teaspoon smoked paprika (optional)
1 teaspoon garlic powder (optional)
Instructions
In a clean mixing bowl or a tall container, add the egg, Dijon mustard, and white wine vinegar (or lemon juice). Ensure that the egg is at room temperature.
Using an immersion blender, blend the ingredients together until combined and slightly frothy.
While continuously blending, slowly pour in the neutral oil in a thin stream.
Once all the oil is incorporated, scrape down the sides of the bowl with a spatula and blend again until the mayonnaise is thick and creamy.
Add salt to taste and blend for a few more seconds to incorporate.
