Homemade churros are a delightful treat that brings the flavors of traditional Spanish and Mexican cuisine right into your kitchen. These crispy, golden-brown doughnut-style desserts are coated in a generous layer of cinnamon sugar and can be served with a delicious chocolate sauce for dipping.

1 cup water
2 tablespoons granulated sugar
1/2 teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour
2 large eggs
1/2 cup granulated sugar (for coating)
1 tablespoon ground cinnamon
Vegetable oil (for frying, about 4 cups)
Instructions
In a medium saucepan, combine 1 cup of water, 2 tablespoons of sugar, 1/2 teaspoon of salt, and 2 tablespoons of vegetable oil. Bring the mixture to a boil over medium heat, stirring occasionally.
Once boiling, remove from heat and stir in 1 cup of all-purpose flour until the mixture forms a ball.
Let the dough cool for a few minutes, then add 2 large eggs, one at a time, mixing well after each addition.
In a large pot or deep fryer, heat about 4 cups of vegetable oil to 350°F (175°C).
Transfer the churro dough to a piping bag fitted with a star-shaped tip. Pipe 4-6 inch long strips directly into the hot oil, cutting them with scissors.
Fry the churros for about 2-4 minutes, flipping them halfway through, until golden brown.
In a separate bowl, mix 1/2 cup of granulated sugar with 1 tablespoon of ground cinnamon. Roll warm churros in the cinnamon sugar mixture.
Serve the churros warm, optionally with chocolate sauce for dipping.
