Ingredients
Scale:
2 slices whole grain bread (or gluten-free bread for a gluten-free option)
1 ripe avocado, ideally Hass
1 can (4-5 ounces) sardines in olive oil or water
1 tablespoon fresh lemon juice
Salt and pepper, to taste
1 tablespoon capers (optional)
Fresh herbs (e.g., parsley, cilantro, or dill)
Red pepper flakes (optional)
Cherry tomatoes, halved (optional)
Instructions
Toast the whole grain bread slices in a toaster or under the broiler until they are golden brown and crispy (about 3-5 minutes).
While the bread is toasting, cut the ripe avocado in half, remove the pit, and scoop the flesh into a small bowl. Add fresh lemon juice, salt, and pepper. Mash with a fork until creamy but still slightly chunky.
Carefully open the can of sardines. If using sardines in olive oil, drizzle a little of the oil over the avocado mixture for extra flavor. Use a fork to gently separate the sardines if they are packed tightly in the can.
Spread the mashed avocado generously over each slice of toasted bread. Top with sardines, arranging them neatly on the avocado.
Sprinkle capers over the sardines if desired. Garnish with fresh herbs and a sprinkle of red pepper flakes. Add halved cherry tomatoes on the side.
Enjoy your High-Protein Sardine Avocado Toast while the bread is still warm.
