Ingredients
Scale:
2 cups raw pistachios (shelled, unsalted)
1-2 tablespoons powdered sugar or honey (optional, for sweetness)
1 tablespoon coconut oil (optional, for creaminess)
Pinch of salt (to taste)
Instructions
Prepare the Pistachios: Place the shelled pistachios in a food processor. If you prefer a slightly roasted flavor, you can roast the pistachios at 350°F (175°C) for about 10-12 minutes, watching carefully to avoid burning. Allow them to cool before processing.
Process the Nuts: Start the food processor on a low setting, gradually increasing to high. Process the pistachios for about 5-10 minutes. Scrape down the sides as needed. You will first achieve a coarse meal, followed by a paste, and eventually a creamy pistachio butter.
Add Oil and Sweetener: Once you reach a smooth consistency, add the coconut oil and powdered sugar or honey (if using). Blend again until fully incorporated.
Season to Taste: Add a pinch of salt and blend for a few more seconds. Taste the pistachio butter and adjust sweetness or saltiness as desired.
Store Your Pistachio Butter: Transfer the Healthy Pistachio Butter to a clean, airtight jar. Store it in the refrigerator to keep it fresh for up to two weeks.
