A wholesome recipe for a healthy lunch that can be tailored to your preferences, ensuring you maintain a healthy lifestyle without sacrificing taste or convenience.
Ingredients
Scale:
1 cup cooked quinoa (or rice for gluten-free option)
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced
1/2 red onion, finely chopped
1 avocado, diced
1 cup canned chickpeas, rinsed and drained
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons lemon juice (freshly squeezed)
1 teaspoon Dijon mustard
Salt and pepper to taste
Feta cheese, crumbled (optional)
Sunflower seeds or pumpkin seeds (optional)
Fresh herbs like basil or cilantro (optional)
Instructions
Rinse 1 cup of quinoa under cold water to remove any bitterness. In a pot, combine the rinsed quinoa with 2 cups of water or vegetable broth for added flavor. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Fluff with a fork and let it cool completely to room temperature.
While the quinoa is cooking, thoroughly wash and chop the cherry tomatoes, cucumber, bell pepper, red onion, and avocado into bite-sized pieces. Place them in a large mixing bowl, ensuring even distribution for a balanced flavor in every bite.
Rinse and drain 1 cup of canned chickpeas under cold water to eliminate excess sodium. Add them to the mixing bowl with the chopped vegetables, mixing gently to avoid mashing the chickpeas.
In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of freshly squeezed lemon juice, 1 teaspoon of Dijon mustard, and a generous pinch of salt and pepper until well combined. Taste and adjust seasoning as desired.
Once the quinoa has cooled, add it to the large bowl with the vegetables and chickpeas. Pour the dressing over the mixture and toss gently to combine, ensuring all ingredients are coated and flavors meld together.
If desired, sprinkle crumbled feta cheese and seeds over the top for added flavor and texture. This step enhances both the visual appeal and taste of your healthy lunch.
This healthy lunch can be served immediately or stored in the refrigerator for up to 3 days. For a quick healthy lunch option, serve on a bed of fresh greens or roll it up in a whole grain wrap.
