Healthy energy balls are a fantastic choice for a nutritious snack or a quick energy boost during the day. They are easy to make, require no baking, and can be customized to suit your taste preferences.
Ingredients
Scale:
1 cup rolled oats
1/2 cup almond meal (or ground almonds)
1/4 cup chia seeds or flaxseeds
1/2 cup shredded coconut (unsweetened)
1/4 cup cocoa powder (optional for chocolate flavor)
1/2 cup almond butter (or any nut butter of your choice)
1/4 cup honey or maple syrup
1 tsp vanilla extract
1/2 cup chocolate chips (dark or vegan)
1/4 cup dried fruits (like cranberries or raisins)
Instructions
In a large mixing bowl, combine the rolled oats, almond meal, chia seeds, shredded coconut, and cocoa powder (if using). Stir well until evenly mixed.
In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the wet mixture over the dry ingredients. Mix everything together until fully combined.
Add in the chocolate chips and dried fruits. Fold them into the mixture until evenly distributed.
Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is formed into balls.
Place the energy balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to set.
Once set, store the energy balls in an airtight container in the refrigerator.
